The dish I’m perfecting

Susan got me one of those plastic containers with precut veggies (red and white onions, green, red, and orange bell peppers, hatch peppers). I dice them and saute them along with diced spam. Then I add in diced avocado and roasted pine nuts. Cool sour cream is my latest addition.
